Food as Medicine’s Eric Meredith on WCIU

Chef and dietitian, Eric Meredith, MEd, MS, RD, CHES, CPT, was live on WCIU’s, You & Me on the morning of Thursday, February 23 to promote Oak Point’s Thinking Out Loud: Food as Medicine II. On the morning show, Eric discussed the importance of always eating a healthy breakfast to avoid putting the body in fasting mode, which ends up decreasing metabolism. He reminded viewers to avoid foods with added sugar, sodium and saturated fats, and instead to focus on whole grains, fruits, vegetables and lean proteins. To demonstrate a healthy, affordable breakfast option, Eric made a quick and easy smoothie with strawberries, blueberries, granola, vanilla yogurt and almond milk. Watch the full video clip here:

 

Thinking Out Loud: Food as Medicine II took place on Thursday, February 23, 2017 at Oak Point University. This was the second event in the Food as Medicine series, following the first widely- popular event on October 20, 2016. Guest speakers Eric Meredith, Dr. David Miller, and Dr. Kristine Tohtz were back again, this time to discuss the pros and cons of popular diets. They offered attendees a closer look at the proven ways in which eating healthier, impacts health, and your waist line.
